Ingredients

For the salad:
500 g. young potatoes
250 g. asparagus
5 radishes, thinly sliced
2 springs of green onion, chopped 
parsley, chopped
For the dressing:
juice from 1/2 lemon
2 garlic cloves, finely minced 
1 tsp. mustard powder 
sea salt, to taste

This spring salad is a simple, delicious meal to help your feet better. 

Potatoes are abundant in amino acids that specifically inhibit viral growth. They are high in glucose which provides substance to the liver. Potatoes also help build up glycogen storage.

Asparagus contains significant amounts of healthy fiber and protein which help to maintain blood sugar levels, prevent constipation, stabilize digestion, and stop the urge to overeat.

To prepare the potatoes, add 5 cm. of water to a medium-sized pot, bring it to a boil, and add a steaming basket. Place the potatoes in the basket, cover, and steam for 20 minutes, until the potatoes are very tender.

To prepare the asparagus, steam for 3-5 minutes, until tender.

Remove from the basket the potatoes and asparagus and place in a large bowl together with radishes, green onion, and parsley.

Combine all ingredients for the dressing and mix well. Pour the dressing over the salad and toss until evenly mixed. Serve immediately.
