1 1/2 cups black beans (or white, or red)
1 cucumber, chopped
1 red bell pepper, chopped 
8 cherry tomatoes, cut in halves or quarters 
1 avocado, chopped 
1 leek, chopped
fresh dill, finely chopped 
freshly squeezed lemon juice
sea salt to taste, optional

This healing salad is packed with flavour and colour salad. It can be served alone or with baked vegetables or crackers. The salad is seasoned only with lemon juice and fresh dill. If you want a more intense flavour, add a clove of garlic. 

Tomatoes contain lycopene, which is a beloved nutrient that the liver admires.

Avocados are a healthy source of omega-6 fatty acids, and they can help restore the central nervous system.

Bell peppers are packed with vitamin A and beta carotene which can help boost the immune system and improve vision.

Cucumbers strengthen the adrenals and kidneys and flush viral neurotoxins out of the bloodstream. They hydrate the lymphatic system allowing for better cleansing. 

All varieties of allium, including leeks are nature’s antibiotics.




In a serving bowl mix together all salad ingredients. Season with sea salt and drizzle freshly squeezed lemon juice. 


Finally, drizzle with fresh dill, mix well and serve.
