1/2 lettuce head, chopped
1 red bell pepper, sliced
8-10 cherry tomatoes, cut into halves
3 radishes, sliced
1/2 red onion, sliced
1/2 cucumber, chopped
1/2 bunch parsley, chopped 
1/2 bunch mint, chopped
juice from 1/2 lemon
1-2 tsp. pomegranate melassa, 100% pomegranate juice and date syrup
a pinch of sumac

This typical Lebanese salad is a combination of vegetables, and fresh herbs like mint, parsley, and sumac. Pomegranate melassa gives an authentic taste to the salad. If you don't have pomegranate melassa, sprinkle some pomegranate seeds. Usually, Fattoush salad is served with pita bread, but I've missed it to make it healthier. 




Combine all vegetables in a bowl - lettuce, red bell pepper, tomatoes, cucumber, radishes, and red onion. Sprinkle generously chopped parsley and mint. 


Mix lemon juice and pomegranate melassa. Shake vigorously and pour the dressing on the top of the salad. Toss gently. Sprinkle a pinch of sumac and mint leaves.
