Ingredients

200 g. creamed coconut (paste), lightly warmed
125 g. raspberries, fresh or frozen
5-6 tbsp. raw honey or maple syrup
shredded coconut, for rolling

Making easy, delicious, and healthy desserts is a real pleasure for me. These raspberry raw balls need only 4 ingredients and 5 minutes. The combination of raspberries, coconut, and honey is amazing.

Steps

1

Place the creamed coconut paste in a small casserole with warm water for 5 minutes. Let the coconut paste melt and look like melted chocolate.

2

Mash the raspberries with a spoon until you get a puree. If using frozen raspberries, let them thaw first and then mash them.

3

Combine warm creamed coconut paste, raspberry puree, and honey. Whisk well until the coconut paste becomes pink. Put the mixture in the freezer for at least 20 minutes to harden.

4

Scoop the coconut paste and form small balls. Roll the balls in the shredded coconut. Arrange the raspberry balls onto parchment paper and put them in the fridge to harden.
