Ingredients

125 g. almond butter

1 tbsp. coconut oil, melted

100 g. coconut sugar

1 tsp. vanilla powder or paste

80 g. cacao powder, unsweetened

2 eggs, slightly beaten

1 tsp. baking powder

a pinch of salt

dairy-free chocolate chips

In a large bowl combine together almond butter, coconut oil, coconut sugar, vanilla powder, eggs, cacao powder, baking powder, and salt. Mix until well combined. Add chocolate chips and gently fold in. |

Use a cookie scoop or two spoons to drop the cookie dough onto the prepared baking tray. |

Bake cookies for 8 minutes and remove when edges begin to turn golden brown. The cookies may look a little underdone, but they will continue to cook once you remove them from the oven. Do not overcook. |

Cool for 2 minutes on the baking sheet, then transfer to a wire rack to cool completely. Makes 12 cookies. Lightly warm are most delicious. |
