Ingredients

125 g. almond butter
1 tbsp. coconut oil, melted
100 g. coconut sugar
1 tsp. vanilla powder or paste
80 g. cacao powder, unsweetened 
2 eggs, slightly beaten
1 tsp. baking powder
a pinch of salt
dairy-free chocolate chips

These flourless cookies are one the most delicious cookies I've baked at home recently. They are soft, fudgy, moist, and sweet. But absolutely gluten-free and sugar-free. You just need 15 minutes to satisfy your chocolate cravings.

Preheat the oven to 180 degrees. Line a large baking tray with parchment paper.

In a large bowl combine together almond butter, coconut oil, coconut sugar, vanilla powder, eggs, cacao powder, baking powder, and salt. Mix until well combined. Add chocolate chips and gently fold in.

Use a cookie scoop or two spoons to drop the cookie dough onto the prepared baking tray.

Bake cookies for 8 minutes and remove when edges begin to turn golden brown. The cookies may look a little underdone, but they will continue to cook once you remove them from the oven. Do not overcook.

Cool for 2 minutes on the baking sheet, then transfer to a wire rack to cool completely. Makes 12 cookies. Lightly warm are most delicious.
