Avocado pesto potato salad

Ingredients

For the salad:
500 g. young potatoes, skin on
2 sprigs of green onion, finely chopped 
For the pesto:
1 avocado, ripe
2 cups basil, fresh
3 garlic gloves
sea salt, black pepper
3/4 cup walnuts

This potato salad is one of my favorite spring-summer salads. The combination of potatoes and basil is just perfect and I often make this salad at home. 

Potatoes are an excellent source of B6, a vitamin that is essential for the formation of almost every new cell in the body. Potatoes are also known to be good for promoting cardiovascular health and are highly beneficial for reducing the risk of heart attack, stroke, atherosclerosis, and COPD. 

 

Steps

<span>Steam the potatoes in a steamer set over a pan of boiling water for 20 minutes, until tender.</span>

Meanwhile, combine in a blender avocado, basil, garlic and walnuts. Season with salt and pepper. Add a tablespoon of water and blend until smooth.

Pour the pesto over the steamed potatoes and mix well. Garnish with finely chopped green onions and basil.
