Garlic dill roasted baby potatoes

Ingredients

1 kg. young (baby) potatoes, skins on 
1 cup fresh dill, finely diced
5-6 garlic cloves, crushed
sea salt to taste

These roasted potatoes are a healthy version of the traditional Bulgarian recipe Sauté potatoes. But my recipe is prepped fat-free. For an authentic taste, I garnish with fresh dill and garlic. 

Potatoes are one of the most powerful anti-pathogenic foods. Potatoes are antiviral, antifungal, and antibacterial, with nutritional cofactors and coenzymes. Potatoes are a nutritious, healthy food that is rich in vitamins A, C, & B-complex and minerals such as manganese, iron, magnesium, and potassium.

<span>Place the potatoes in a steamer. Cover with a lid and steam for 20 minutes, until tender. If there are bigger potatoes, cut them in halves or quarters.</span>

Preheat oven to 200 C. Line a<span> large baking sheet with parchment paper.</span>

Arrange the steamed potatoes on the baking sheet. Spread them in an even layer. Sprinkle with sea salt and gently toss. Roast for 20-25 minutes, flipping veggies halfway through until the skins are crispy.

<span>Remove from oven and sprinkle with fresh dill and smashed garlic. </span>
